Sharing One Of My Favorite Recipes...Enjoy!

I was given this recipe by my sister-in-law, Daron. It's is called Carrot Souffle, and it is very popular for Passover, but every time I make it for Thanksgiving it is a hit. Try it, you'll love it.

2lb cooked carrots, soft
6 eggs
2/3 cup sugar
6 tablespoons matzah meal (Comes in a box in Jewish section of market. )
2 teaspoons vanilla
2 sticks margarine, melted
Dash of nutmeg

Blend cooked carrots and eggs in Cuisinart. Add remaining ingredients. Put in deep Pyrex, bake at 350 for 40 minutes

Topping

1/2 cup chopped pecans
3 teaspoons brown sugar
2 teaspoons soft margarine

Mix above and place on top. Bake an additional 5-10 minute
